I gotta tell ya. For the simplest food on the planet to prepare - I can't think of something that I like better. There is something about a good grilled cheese that usurps fine dining and hoity toity ingredients. The smell, taste and texture are something that can't be beat. I like just a thin spread of mustard in mine - it seems to make the cheese a little tastier - especially boring old processed cheese. I saw Alton Brown do it once and he used a SECOND cast iron skillet he heated on a second burner and placed on top of the grilling sandwich to get both sides at once. He also mixed a couple of different kinds of cheese to get some interesting flavors going.
In Britain they serve Welsh Rarebit - sort of melted cheese over toast, and in France they have the Croque Monsier - sort of a grilled ham and cheese sandwich. However, for a purist like me - it has to be only a couple of ingredients to be in the game - bread, cheese, butter, and perhaps (perhaps) a little mustard.
